Autumn in the mountain is absolutely stunning. Most of the year you think that near enough all the trees you see on the mountains are pines and evergreens but it is only at this time of year that you realise how many aren’t. We were lucky this year to have blue skies most days, cold temperatures and no wind meaning that the changing leaves stayed on the trees and provided the valley with a mass of colour for a long time.

At this time of year, we close Chalet Cannelle to guests and have some time to relax, walk, take a holiday and plan the menu for the winter ahead. This Autumn has been very different as we have spent every single day writing our cookbook. It is a project that has been on our minds for many years, since we lived in Sydney but I don’t think either of us thought we could actually do it.

Today, we submitted our work and in a week we will get the proof. It’s a massive relief as we really wanted to be able to sell it in December and have it for sale in the chalet this winter but there is a nervous excitement now while we wait to get it back and hope it is good enough!

So, what’s in it? Lots! The book has 90 recipes over 204 pages in 8 sections with all the recipes being served at Chalet Cannelle at some point over the last 4 years. It’s quite a mix from sausage rolls and cakes for afternoon tea to making your own pasta and our 24 hour slow cooked chili. The recipes span British, French, Italian, Japanese, American, Spanish, Mexican, Indian & Thai cuisine and represents a stay here at Chalet Cannelle.

For now, we will take a little rest from the cooking, photo studio and computer and eagerly meet the postie each day while we wait for our book to arrive.
